QUEEN'S CAKE..





RECIPE:

INGR:

Butter                                     1/2 cup
Sugar                                     1/2 cup
Flour(maida)                          3/4 cup
Eggs                                       3
Almond essence                  1/4 tsp
Lemon juice                          1/2 tsp
Baking pd                              1/2 tsp
Blanched almond, 
cahew, raisins chopped       1/4 cup    

Method:

Preheat oven to 180 degrees. Grease the cake tin.
Cream butter and sugar.  Add yolks of egg and beat until fluffy.
Sift baking pd, maida together and mix it into yolk mix.
Add half of the nuts and raisins, almond essence, lemon juice.
Mix in the egg whites. Pour into greased proof tins and sprinkle with nuts on top.
Bake it in the oven for 40 mts.
Thrust a wooden pick in it. If it comes out smoothly, without anything sticking to it, the cake is ready.
Cool the cake for a good 45 mts to 1 hour.
Cut the cake and store in airtight container.

Note:
Here i have poured some of the cake mixture into muffin trays and beautiful cup cakes are ready !
